I have in my car a cd player, model is Sony CDX-GT200.  I can not quit a demo mode. Unless I press the buttons and the volume key ...

I've been checking the online manual and I could see on page 9 an option called "DEMO" that you can set ON and OFF. You can find the manual in this link: https://bit.ly/2rw53gg.
