I want to update my Sony Xperia Z5

There are two different ways to update your device.
1. Go to Settings > About phone > Software update > tap on the update and install it.
2. Download Xperia Companion from the link below > connect your device to your computer and click on "Software update".

If you mean past an officially provided version on the Sony website (7.1.1), you will more than likely run into problems. It's fully up to community support and bug reporting, debugging and whether or not you can provide the info necessary for those who can troubleshoot or provide any patches any problems with your device. (Which not to be rude but given your post's lack of content, I strongly doubt.)
If it's another trouble entirely, the previous post should be sufficient enough.
Just remember if you're gonna go down a path that means leaving the official ecosystem you'll usually end up having to search quite a lot up and provide lots of detail on the relevant community support channels. Be prepared for it
@swirlyhz, totally agree.
I don't know if there are any Oreo/Pie ROM's available at for example, the XDA forums, but yeah, it will always be on your own risk.
The only reason I would ever consider trying it myself was that I couldn't afford a newer device and I really needed a feature from a later Android version or that one of the apps that I use on daily basis stopped working on earlier Android versions.
