The Handycam will always record sound. The consumer range from what I can see do not have the option of disabling audio recordings.
Same with Picture Motion Browser, it will not allow you to replace the audio stream or disable it all together. What you could do is try using something like Sony Vegas (trial version available still) which you can control your audio/video streams individually.
