I've searched the help guide of the camera, I could find some picture effect settings explained here: http://bit.ly/2J6lWZi. However, the effect you're trying to achieve doesn't seem to be mentioned anywhere so have you tried to use an editing software?

Hi @CymmroCymmraeg,

I'm afraid that you'll either need to switch your monitor/TV to b&w or to alter your images/videos to b&w in post production by means of some software (photo/video editing). To the best of my kowledge the camera itself does not have a feature to do so.
